Chocolate chip bar cookies

This bar cookie recipe has been a favorite in our household.  When the thought of baking cookies doesn't excite me, I reach for this recipe time and time again.   Easy.  And its a good for you recipe too.    

Chocolate chip bar cookies
Preheat oven to 350 degrees.  Use Pam cooking spray to coat bottom of  13x9 inch baking pan.

6 tablespoons margarine or butter, softened  (not melted)
1/3 cup dark brown sugar
1 large egg   (this recipe works best using the large egg)
1/2 cup Splenda granulated sweetener
1/4 cup prune puree (I use just one small baby food jar of apple/prunes)  
1-1/2 teaspoons of vanilla extract
1-1/2 cups all purpose flour
1 teaspoon baking soda
2/3 cups of chocolate chips
* You don't have to ice these but I do.   I use a simple chocolate icing recipe.  In the summer months these bars are good served with ice cream.  Yummy.

In a large bowl, with mixer, beat the butter and brown sugar together until light and fluffy.   Add the egg, sweetener, prune, and vanilla and beat until smooth. 
In a separate bowl, whisk together the flour and baking soda.  Add the flour mixture to the wet ingredients and stir together by  hand until combined.  Stir in the chocolate chips.
Spread the mixture into the prepared pan.  Bake for 12 to 13 minutes, or until light brown and center feels firm to the touch.

* I will say it can be just a touch difficult to get the mixture to spread out at first but keep working at it and will come together fine.  
* Great to tote to your next social gathering.
